Currently, the issue of developing adaptive varieties crops based on evolutionary principles is becoming urgent. The need to develop for Russia determined by contrast its natural and climatic conditions, global climate changes, increasing unpredictability weather. This task highly relevant valuable food crop buckwheat, yields which are still low due insufficient resistance modern extreme environmental factors. Vegetation experiments study genotypic reaction light dark phases photosynthesis leaves changes in soil moisture availability were carried out. During period buckwheat breeding from local samples plants showed a significant trend activity transpiration plant with certain decrease their limitation. It was established that content 70 30% total capacity caused, cultivars, mean fluorescence quantum yield 52.5%, electron-transport chain 53.7%, intensity 66.5%, 82.1%, whereas cultivars it decreased 40.0%, 52.1%, 51.0%, 76.1%, respectively.
